NutNhealthy Bread 3 cups -- warm water 1 ½ Tbl -- active dry yeast ¼ cup -- olive oil ¼ cup -- honey ¼ cup -- ground barley (I ground mine in a blender until slightly coarser than cornmeal) 1 Tbl -- wheat germ ¼ cup -- sugar (any kind is fine, except maybe confectioners) ½ cup -- potato flakes, instant potatoes or potato flour/powder (this is the starch part of your dough enhancer, you don't need to buy premade dough enhancer) 2 Tbl -- wheat gluten (also part of the dough enhancer) ¼ cup -- corn meal ¼ cup -- powdered milk 1/3 cup - molasses ½ cup -- rice flour (I ground brown rice in my blender to a flour) ¼ cup -- oats (any unflavored kind but old fashioned makes a nicer texture) Mix all of these together and let sit in a warm spot for 15-20 minutes. 1/8 cup -- distilled white vinegar (this is the acid part of your dough enhancer and it does not affect flavor) 1 Tbl -- kosher salt (regular salt is also fine) ¼ cup -- walnuts or almonds ¼ cup -- sunflower seeds ¼ cup -- hazel nuts ¼ cup -- seeds (sesame, millet, flax whatever you like or a mixture) 3 -- 3 ½ cups of whole wheat flour 1 cup -- rye flour OPTIONAL (omit ½ cup of whole wheat flour) White flour -- this is added slowly and the amount will vary due to humidity Knead for 10 minutes Make a dough ball, oil the dough ball and the bowl, place dough ball into the bowl and set in a warm dark place lightly covered with a thin towel. Monsanto. Representatives of Food Democracy Now came to the Seed Exchange and gave an emotionally charge account of the case, and their ongoing fight to safeguard the genetic purity of crops. In the afternoon, members of Time's Up! and the New York Bicycling Coalition led a bike ride that toured community gardens of the Lower East Side and made a stab at beginning new ones by seed-bombing vacant lots.
